It wouldn’t be summer without an abundance of zucchini – at least around here. Zucchini is so easy to grow and it seems like there is always a surplus once the plants mature. I am always looking for the best zucchini recipes.
The years we haven’t grown zucchini it was easy to come by. Family and friends with gardens are always eager to give some zucchini away.
I heard a rumor several years ago about how there is a town with an abundance of zucchini every year. If you drive to the store, you don’t want to leave your car unattended with the windows down – otherwise, you’ll come back to a pile of zucchini in your car!
I don’t ever like the produce from our garden to go to waste. Especially zucchini’s. They are so good! So each year, I do a search to find the best zucchini recipes to make. I like a variety of flavors when I make the recipes too.
One of my favorite things to do with zucchini is to spiralize it and use it in place of noodles for spaghetti or anything else we’d be putting noodles in. I don’t cook the zucchini noodles before using them, but instead, let it sit with sauce on it for a few minutes before eating. The sauce softens up the noodles enough that they are very similar to spaghetti noodles.
This is pretty close to the spiralizer that we have. I bought it when spiralizers first started coming onto the market and the one I bought is no longer available. I love our spiralizer! It is so easy to make noodles out of zucchini. My only complaint about it is that it takes up so much space, since I don’t use it everyday. It does get a lot of use during the summer and then sporadically the rest of the year. If you don’t have a spiralizer yet, grab one here!
We came up with a delicious stuffed zucchini recipe years ago. I will have to get around to writing out the directions for making it and posting it. In the meantime, enjoy the best zucchini recipes below.
